Mussels na buzara is a classic Dalmatian dish where shellfish are cooked in olive oil, wine, garlic, and parsley. The recipe is simple yet delivers a rich and authentic taste of the sea, with the Novigrad mussel being especially prized
Ingredients:
3 kg mussels
2 dl white wine
3 cloves garlic
1 dl olive oil
parsley
Preparation:
Clean the mussel shells from any deposits and impurities, remove the beards, rinse them in seawater or cold water, and let them drain so the seawater comes out. In a large shallow pan, pour olive oil and lightly fry the finely chopped garlic over low heat, then add the chopped parsley. Add the mussels, cover, and shake the pan several times. There is no need to add salt since the mussels will release salty seawater into the sauce. Once the mussels begin to open, add the wine, shake again, and let simmer for a few minutes until the sauce comes to a boil. Then turn off the heat, cover, and let it rest for a short while
